It can reduce the growth of Streptococcus mutans, Streptococcus salivarius, Streptococcus sanguis and some strains of Escherichia coli, Saccharomyces cerevisae and Salmonella typh. Xylitol blocks the binding of bacteria to host cells, preventing them from multiplying.
